This course considers the importance of creation care in the context of 21st-century ethical and climate challenges raised by our food system, especially its treatment of animals. We survey the philosophical, theological, moral, and environmental implications of this system for human beings, animals, and the Earth. We then consider the potential risks and rewards of various discipleship practices that seek to address these problems, including food system reform, agrarianism, community supported agriculture, plant-based cooking, veganism, and animal welfare and rights advocacy. Assessment is achieved through class discussion, informal weekly writing, exams, and a final paper. Not offered in 2022-23.
